Les Beaux Mets sits at the heart of the Baumettes prison in Marseille — and it is the only restaurant in the country, inside a penitentiary, that is open to the general public.
In the dining room and in the kitchen, the service is entirely run by inmates.
Thanks to a reintegration program for prisoners nearing the end of their sentence, they have the opportunity to learn the fundamentals of the culinary and hospitality trades. Guided by a professional chef and maître d’hôtel, these inmates rebuild a connection with the outside world — and for some, a genuine vocation is born.
