Indian cuisine is a gustatory journey, olfactory but also a visual pleasure in the image of traditional Indian festivals, synonymous with color and joie de vivre … Because in India, eating is not just a matter of taste, in temples or in the street, it is even a ceremonial. The secret of this gastronomy is of course spices such as cardamom that grows in the south of the country. They are the indispensable signature of the dishes of the subcontinent. India is also the world’s leading spice producer. But there are good and bad spices… So how do you tell the difference? To find our way there we went … in Brittany in the studio of Mathilde Roellinger and Beena Paradin. This is where they test and develop the best blends of spices. In France, this cuisine has gradually invited itself alongside other gastronomy in the world, until it has become the fashionable exotic cuisine, in restaurants but also in supermarkets or in the frozen section. For it to enter our daily lives, French manufacturers and young chefs have had to adapt it to consumer taste and renew the genre.  But after all, it’s a bit like the DNA of these cosmopolitan recipes: you will discover that curry is an English invention, and that naan cakes filled with cheese were born in an Indian restaurant… in Paris.
