Increasing numbers of French are trying to eat non”: non-sugar, non-fat, non-meat, and now non-gluten or non-lactose. A reaction against the increasing industrialization of food production, which is constantly being rocked by health scandals. The principle of precaution goes far beyond the area of health checks and is becoming a veritable way of life: nearly one in six French people avoids gluten, now public enemy number one. Eliminating toxins, favoring food rich in nutriments and listening to one’s body have become a common theme. Products labeled “non” are flooding the shelves of supermarkets. However, such eating habits sometimes turn to obsession and some people end up by compulsively monitering everything that is on their plate.”
