Should one say ?bon appétit? before a meal? Who should go into a restaurant first, the man or the woman? At what moment does one kiss a woman’s hand? Good manners, so long fallen into disuse, are back. Nadine de Rothschild, a real ?guru? of elegant living has just opened an academy of etiquette in Geneva. Young girls from good families, along with businessmen, jostle for places in her table manners classes. Schools for butlers and housekeepers are also pulling them in. Mireille, a housewife from Paris, decided to take a course in Holland. White gloves and uniform? she’s learning how to serve with distinction. But it’s not only the well-off who are learning good manners. In Montpellier, Arsène Bouakira has set up a good manners school for children from an underprivileged neighbourhood. Overseas, good manners are the fashion. In Texas they learn to eat their hamburger properly and in Japan, where they do things very differently, they dream of behaving like Marie-Antoinette.
