CHINESE FOOD: TO BE TAKEN WITH A PINCH OF SALT ? | Doc du dimanche | France 5

Chinese food offers the promise of a cheap culinary journey right on the doorstep… Tasty and fragrant, it’s the most consumed exotic food in France. But do we know the authentic cuisine of the Middle Empire? Self-service restaurants and caterers are burdened with a poor reputation. Their kitchens at the back are objects of fantasy, often the wildest.  What are they really like? How far will some go to lower prices? Fortunately, a fresh generation of restaurateurs shares an obsession: restore the glory of Chinese cuisine with a major emphasis on authenticity. Their menus focus mainly on regional specialties. Actually, China enjoys a culinary tradition thousands of years old. We traced back to the origins of certain iconic dishes, such as noodles. From the far-flung limits of China to the kitchens of French restaurateurs, we discover if this food needs to be taken with a pinch of salt.
