In La Grande Motte, an extraordinary family has taken up a crazy challenge: to open a “bouchon lyonnais” on a Mediterranean beach! This crazy dream is the brainchild of local legend Joël Ortiz. For almost 30 years, Joël has run “La Voile Bleue”, a legendary straw hut on the Hérault coast, selling more rosé and champagne than many a club on the French Riviera. Today, however, he has a completely different project in mind. To create a place that goes against the grain, in the image of the brasseries of his childhood. With his son Lucas, they have 1 month to create everything. Setting up the beach, recruiting a team, drawing up a menu that’s sure to hit the spot… It’s going to be quite a task to ensure the opening, scheduled for early June, of this new place to live, the opposite of traditional straw huts. Forget electro and champagne at €200 a bottle: Chez Colette offers tripe, pig’s trotters, quenelles and brioche sausage, served in generous dishes.
