It’s a charming address in the middle of the Var pine forest. With its meticulous decoration and swimming pool, the hotel was entirely conceived by Laura, its young owner. When we met her two years ago, Laura had just emerged a loser from an obstacle race with Kafkaesque overtones: the race for her third star. After two years of effort and fresh investment, has this young woman obtained that famous mark of hotel quality? Was Laura right to want to obtain these three stars when the rules for awarding them have been totally changed? Decried because they are considered outmoded, the classification of French hotels – formerly carried out for free by the prefectures – is now entrusted to private auditors who have to find their way through the jungle of the 246 points of evaluation on the new form. But there’s nothing to prove that the stars will regain their former sparkle because of this reform.
